1. Beef and guinness stew

Time – 2hrs 30 minutes

Preparation – 20 minutes

Ingredients

  • 3 thick slices of bacon diced
  • ¼ cup all purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 pounds lean stew beef cut in cubes
  • 2 large onions chopped
  • 1 clove garlic
  • 2 to 3 cups of sliced carrots
  • 1 ½ cups guinness stout
  • 1 cup beef broth
  • 2 tablespoon tomato paste
  • 2 teaspoons worcestershire sauce
  • 1 bay leaf
  • ½ teaspoon dried thyme
  • 2 to 3 cups of diced potato
  • 2 tablespoon of fresh parsley
  • Kosher salt (as per taste)

Procedure: In a large saucepan cook the bacon until light brown. In a food storage bag mix the flour, salt and pepper. Add the beef cubes and toss until well coated. Add the coated beef and onions to the bacon and continue cooking until they get brown. Add the garlic and cook for a minute long. Add the carrots, stout and broth. Pour the tomato paste and worcestershire sauce. Add the bay leaf and bring it to a boil. Reduce the heat and cook at a simmer for 1 ½ to 2hrs until the beef becomes tender. Add the thyme and potatoes and cook until the potatoes soften. Stir in the parsley and add salt and pepper to taste. Serve with crusty rolls or slices of baked bread.

2. Simple meatloaf

Time – 90 minutes

Preparation – 15 minutes

Ingredients

  • 4 tablespoon ketchup
  • 4 tablespoon maple syrup or honey
  • 2 tablespoon dijon or similar mustard
  • 1 teaspoon worcestershire sauce
  • 2 pounds ground beef
  • 2 large eggs lightly beaten
  • ½ cup milk
  • 1 cup fine breadcrumbs
  • 2 tablespoon dried minced onion
  • 1 ½ teaspoons burger seasoning

Procedure: Heat oven to 350 f. Spray a 9 by 5 by 3 inch loaf pan with cooking spray and set aside. In a small bowl combine 4 tablespoon ketchup, maple syrup, mustard and worcestershire and set aside. In a large bowl mix the ground beef, eggs, milk, breadcrumbs, onion, burger seasoning and ½ cup of ketchup. Pack it into the prepared loaf pan. Bake the meatloaf for 1 hour and 10 minutes. Drain off any excess fat and top it with the topping mixture. Bake for 10-15 minutes more. Serve and enjoy.

3. Cheeseburger soup

Time – 1 hour

  • 1 pound extra lean ground beef
  • 2-3 teaspoon extra virgin olive oil
  • 1 large onion
  • 1 cup celery
  • ½ cup red bell pepper
  • ½ cup carrots
  • 3 medium potatoes
  • 1 teaspoon parsley
  • ½ teaspoon basil
  • 1 quarter chicken broth
  • 4 tablespoon butter
  • 1/3 cup all purpose flour
  • 2 cup milk
  • 8 ounces cheddar cheese
  • Salt
  • Black pepper
  • Garnish: cooked bacon

Procedure: Mix ground beef, onions and celery in a saucepan or stockpot over medium high heat and cook for 7-10 minutes in olive oil. Add the bell peppers, carrots, potatoes, parsley and basil. Bring the soup to a boil and simmer till the vegetables cook. In a separate pan heat butter and add flour and stir until smooth. Slowly stir in the milk and then the cheese and cook until the mixture thickens. Add it to the soup and blend it well. Add salt and pepper to taste. Garnish with cooked crumbled bacon, parsley and serve with warm biscuits or rolls.

4. Garlic roasted chicken leg quarters

Time – 1 hour

  • 4 cloves of garlic finely minced
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt
  • 1 teaspoon chilli powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon black pepper powder
  • 2 tablespoon olive oil
  • 4 chicken leg quarters
  • ½ cup chicken broth

Procedure: Preheat oven to 425 f. Lightly oil a baking dish. Mix garlic, oregano, salt, chilli powder, cumin, black pepper in a small bowl and make a paste. Place the chicken pieces on the dish and rub the garlic mixture over each. Pour ½ cup chicken broth on the dish. Bake the chicken for 40-50 minutes and serve it.

5. Chicken tortilla soup

Time – 1 hour

Preparation – 15 minutes

  • 4 cups chicken stock
  • 1 can tomatoes
  • 1 can green chillies
  • 2 tablespoon lime juice
  • 2 tablespoon cilantro
  • 2 green onions chopped
  • 1 medium carrot diced
  • 1 cup chicken
  • ¾ cup corn
  • ½ teaspoon black pepper
  • Salt to taste
  • ½ cup vegetable oil
  • ½ cup shredded cheese
  • 3 corn tortillas

Procedure: Combine the chicken stock with tomatoes, lime juice, jalapenos, green chilli, cilantro, green onions, carrots, corn in a large saucepan or pot and cook for 45mins. Add the chicken and season it with salt and pepper. Cook the tortillas in vegetable oil until they become crispy. Top each bowl of soup with tortilla strips and shredded cheese.

6. Roasted potatoes with ham

Time – 40 minutes

Preparation – 20 minutes

Servings – 4-6

  • 2 pounds potatoes sliced
  • 12-16 ounces ham
  • 1 large onion
  • 2 cloves garlic
  • 2 tablespoon fresh parsley
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Procedure: Add 3 tablespoon of fat in a pan and cook the sliced potatoes until light brown. Remove them and add the onions and ham until they change colour. Add the garlic and cook for a minute longer. Heat the oven to 400 f. Lightly grease a baking dish or pan. Add the potatoes and ham and cook for 20 minutes until tender. Serve and enjoy.

7. Oven braised rosemary chicken legs

Time – 80 minutes

Preparation – 10 minutes

Ingredients

  • 3 tablespoon olive oil
  • ½ cup red onion
  • 4 cloves of garlic
  • 4 chicken legs
  • ½ cup all purpose flour
  • Salt to taste
  • Black pepper
  • 1 cup white wine
  • 2 tablespoon tomato paste
  • 1 bay leaf
  • 1 ½ cup chicken broth
  • 4 to 6 sprigs Rosemary

Procedure: In a saucepan pour some olive oil and cook the onions. Add the garlic and cook for a few more minutes and remove them. Heat the oven to 325 F.  Season the chicken legs with salt, pepper and flour and cook until brown. Add the onions back into the pan. Mix the wine and tomato paste, pour in the pan and add the bay leaf. Bring it to a boil. Add the broth and Rosemary sprigs. Cover and cook in the over for 1 hour until the chicken tenderizes. Serve and indulge.
